Directions
- Pat the shrimp dry and salt them.
- Heat the butter and oil in a wide skillet over medium-high. Add the garlic and stir for 20 seconds.
- Add the shrimp in one layer. Cook about 2 minutes per side, until they turn pink and curl.
- Take the pan off the heat. Add the lemon juice and parsley. Toss, and serve while the butter is still glossy.
Tips
- Dry the shrimp or they steam instead of searing.
- If the pan is crowded, cook them in two rounds.
