Directions
- Blend the banana, oats, egg, milk, and salt until the oats are mostly broken down. Let the batter sit 5 minutes so it thickens.
- Heat a skillet over medium and add a small piece of butter.
- Pour in about 1/4 cup of batter for each cake. Cook until the surface looks set and the edge is dry, about 2 minutes, then turn and cook 1 minute more.
- Serve with honey. This amount makes two short stacks.
Tips
- Let the batter sit five minutes or the oats stay gritty and the cakes tear.
- Medium heat. A hot pan browns the outside before the center sets.

The rest made the batter easier to flip. Straight from the blender it was thin.
